Evaluation of five mixtures of potato and wheat flour for making bread

The objective of this research was to determine the best percentage of mixture, nutritional quality and functionality of five mixtures 0, 10, 20, 30 and 40% of potato and wheat flour for the production of bread. Physicochemical and nutritional tests and potato flouring processes were carried out. The bread was transferred to laboratories to analyze the content of vitamins, minerals, protein, among others. The functionality of the product was analyzed (flavor, consistency, color, smell, texture). The results of 40% potato flour presented a higher percentage of protein, vitamin C, potassium and yield. Treatment with 0% showed better results for iron, vitamin A, B1 and B9. With respect to the content of zinc and sodium, the 20% treatment had the highest amount and in terms of dietary fiber, the 30% treatment showed better content. The organoleptic quality with the greatest acceptance was treatment with 40% potato flour according to the flavor.
