Assessment of physical, chemical and biological hazards at animal slaughter sites within the seat industry

The main objective of the research was the evaluation of the physical, chemical and biological hazards of transport, slaughter and slaughter of cattle, pigs and birds, in the municipalities of Palín and Amatitlán, for these five trails were visited, where the transport of the animals to the slaughter plants was evidenced, methods of stunning prior to slaughter and how to make the removal of the same. It was determined that the risks of transport for the animals of the three species are in the structure of the vehicle, causing injuries, blows or suffocation, at the place of slaughter within the channel and by incorrect application of the stunning method. Chemical hazards are by the use of disinfectants or cleaning detergents and biological ones are only for the consumer of animal meat by bacteria, viruses, fungi, yeasts or parasites. These dangers affect the structure and quality of meat.
